Orzo Salad

Ingredients

1 cup orzo
1 cup chopped fresh tomatoes
1/4 cup finely chopped celery
5 whole finely chopped kalamata olive's
1/4 cup fat-free italian salad dressing
2 tablespoon fresh lemon juice
1 tsp dried oregano (preferably Greek rigani)
1 tbsp chopped fresh mint, for garnish
2 oz crumbled low-fat feta cheese (optional)

Preparation

Cook the orzo al dente according to package directions. Drain well, rinse with cold water to cool quickly, and drain again. Return the orzo to the pot along with the tomatoes, celery, and olives.

Stir together the Italian dressing, lemon juice, and oregano, and pour over the pasta mixture. Toss to mix well.

Transfer the salad to a large bowl and garnish with fresh mint. Cover and refrigerate at least 30 minutes.

Serve as is or topped with feta cheese.
