Bistro Chicken Pasta Salad

Ingredients

2 whole boneless skinless chicken breasts, grilled or broiled
2 cups cooked penne or rotini pasta
1 cup cherry tomatoes, quartered
1/4 cup sun-dried tomato, drained & chopped
1/2 cup italian dressing, or use Caesar dressing
1/3 cup lightly packed fresh basil leaves, cut into strips
1/4 cup bermuda red onion, chopped
1 cup parmesan cheese, shredded

Preparation

Grill or broil the chicken until it is cooked all the way through. Cut into bite-size pieces.

Cook pasta per the directions on the package. Drain pasta when finished and allow to cool slightly.

Combine the chicken, pasta, tomatoes, and dressing in a large bowl. Allow the dish to sit in the refrigerator for 30 minutes, before serving, to allow for full flavor development.

Garnish with basil, chopped red onion and Parmesan cheese before serving.
