Hearty Beef Stew

Ingredients

1 tablespoon garlic-infused olive oil
1 lb beef tenderloin tips, cut into 1-inch pieces
1/2 tsp salt
1/4 tsp freshly ground black pepper
16 oz frozen mixed vegetables with potatoes
2-1/2 cups canned beef broth, divided
1 teaspoon dried thyme leaf
2 tbsp cornstarch

Preparation

Heat oil in a large deep skillet over medium-high heat. Add meat, salt, and pepper and stir-fry for 3 minutes or until meat is no longer pink. Transfer the mixture to a bowl and set aside.

Meanwhile, thaw the vegetables in a microwave oven on HIGH for about 3 minutes or in a colander under warm running water. Add 2-1/4 cups broth, thyme, and thawed vegetables to the same skillet used to cook the beef. Cover and bring to a boil over high heat. Reduce heat, cover, and simmer for 5 minutes or until vegetables are tender. Combine remaining 1/4 cup broth and cornstarch, mixing until smooth. Stir into stew. Cook, uncovered, for 2 minutes or until thickened, stirring occasionally. Stir in reserved meat with any accumulated juices and heat through. Ladle into shallow bowls.
