Signature Potato Salad

Ingredients

8 lbs. (128 oz) white potatoes, boiled, drained, peeled
8 whole Hard boiled eggs, chopped
2 quarts Celery, diced
2 cups Fresh scallions, tops and bulb, chopped
1 quart Cucumbers, seeded, diced
2 tbsp Mustard, Dijon style
1 quart Mayonnaise
1 quart Green Goddess salad dressing
2 tbsp Salt
1 tbsp White pepper

Preparation

Combine in large bowl. Mix gently but completely. Transfer to storage containers. Cover. Chill well.
