Pessac-Léognan:

One of the youngest appellations in France, this region just outside the modern city of Bordeaux (and once part of the appellation Graves) boasts vineyards that have won prestige for the entire Bordeaux region. Its hilly, well-drained soil suits the Sémillon and Sauvignon Blanc grapes used to make their dry whites and the Cabernet Sauvignon and Merlot used in their supple, earthy reds.

Haut-Médoc:

The most important district of the Bordeaux region, home to four famous wine communes: St. Estéphe, Pauillac, St-Julien, and Margaux. In general, wines labeled with the Haut-Médoc AC are much better than those simply labeled Médoc AC, but they are not as good as wines from one of the individual commune appellations such as Pauillac AC or Margaux AC. The main grapes used throughout the Haut-Médoc are cabernet franc, cabernet sauvignon, and merlot.

Barossa Valley:

North of Adelaide, this relatively warm region of South Australia is home to Australia’s largest winery. It is famous for its robust Shiraz and Cabernet Sauvignon as well as rich Sémillon and Riesling (both of which are grown in the cooler hills).

Syrah:

Originally grown in France’s Northern Rhône Valley (where it is a noble variety) this grape has spread to Australia, California, Washington, Italy and Spain. In the Rhone region this grape produces deeply colored wines with full body and firm tannin, however in Australia, where it is known as Shiraz, the wines are lighter and fruitier. Aromas and flavors for these wines vary as much as their geographical breadth suggests: berries, smoked meat, bell peppers, even tar.

Shiraz:

Australian name for the grape known as Syrah in France.

Ingredients

1 cup butter
1 1/2 cups sugar
3 eggs
4 cups flour
1 1/2 tbsp baking powder
1 1/2 tsp salt
1 1/2 tsp cinnamon
2 cups apple cider
2 cups apples, peeled, cored, and chopped
1 teaspoon cinnamon

Preparation

Preheat the oven to 375°F. Grease and flour two loaf pans or eighteen muffin cups.

2. Cream the butter and 1-1/4 cup of the sugar together in a large bowl. Add eggs and cream thoroughly.

3. Sift the dry ingredients together. Add them to the egg mixture, alternating with the apple cider. Stir in the chopped apples.

4. Divide the batter between the prepared loaf pans. Combine the remaining 1/4 cup sugar with the cinnamon in a small bowl, and sprinkle it over the batter.

5. Bake for 50 to 70 minutes for bread, or for 30 to 40 minutes for muffins, or until a toothpick inserted in the center comes out clean.
